Master and Servant

Master and Servant- London

Taking its name from Depeche Mode’s eighties hit single, Master and Servant is the debut venture for chef turned restaurateur Matt Edwards.

Having previously worked in the music industry overseeing artists such as Robbie Williams, the former MasterChef semi-finalist has had somewhat of a patchwork career. Why make the move from music into the hospitality sector?

Matt said:

“Moving from music to restaurants was a bit of a leap. People were surprised that I made the move, but I wasn’t allowed to be very creative in the job I was in. Having my own restaurant now allows me to flex a bit of creative muscle myself; the name is in fact a homage to one of my favourite bands.”

Both Matt and Head Chef Luke Cleghorn are former disciples of St John Hotel, speaking about the influence of St John’s Matt added:

“We learnt a lot at St John, I liked the freedom they had with their cooking and we’ll still use fresh, good quality British ingredients- but we will take inspiration from other cuisines from around the world.”

Master and Servant- London

Mhairi Coyle undertook the design of the trendy new Hoxton Square eatery and speaking about her involvement, Mhairi said:

“Matt and I wanted to create something that felt like it was personal to you, rather than a chain.

“Hoxton Square is fantastic in the summer; it is a beautiful place with a really big open park area, so filling seats was never going to be an issue. Our biggest challenge was to create a really special place downstairs in the Master and Servant.

“To do this we used wood cladding, bare brick and a wall of mirrors on the ground floor- creating life and movement about the place. We also created an eat-in kitchen area, so it gives diners a real flavour for the energy of the kitchen. Overall the restaurant gives off a New York speakeasy vibe.”

The 70-cover restaurant opened its doors last month and has since received positive reviews, particularly for their expertly crafted cocktails. Visitors can expect such delights as ‘the Nolitan’ made with Manzanilla sherry, Kamm and Sons ginseng spirit, lemon juice and egg white. The Caesar is an imperious mix of vodka, Master and Servant house clamato juice, horseradish, smoked chilli, lime juice and pikkapeppa.

As for cuisine, the Master and Servant keep it fresh with a varied menu which changes regularly.

Following on from the success of the venue Matt was asked if there were any plans to open another venue, he said:

“I do think it has great potential to be developed. At the moment I’m concentrating on this place but it’s always in our mind.”
