Heaton, Butler and Bayne

Opening its doors in Covent Garden last month, Heaton, Butler and Bayne is the latest offering from restaurateur Robert Siegler, who also owns the nearby Le Deuxieme and The Market Café on Broadway Market.

 

Previously occupied by The Forge, which was also owned by Siegler, the new restaurant takes its name from three businessmen who set up a stained glass manufactures on the site in the 1850s.

The restaurant has been completely redesigned by Gundry and Ducker to create a ‘cosmopolitan yet simple’ feel, speaking about the design a spokesperson from Gundry and Ducker said:

“This was such a fantastic building to work with. We have created a contemporary feel using neutral, clean colours aimed at complimenting the space that already exists. The building itself creates a naturally airy feel and this is something we wanted to accentuate through our use of light.”

A spokesperson from the Heaton, Butler and Bayne added: “It’s an airy design with simple details that let us put the focus on what we think matters: Food, Drink and Friends.”

The 90-cover restaurant features an adjoining bar and downstairs there will be a ‘secret’ cocktail bar called The Office, a spokesperson from the restaurant said The Office would be “a throwback to the 1960’s, when men were gentlemen, and women could flirt with just a raised eyebrow.”

Swedish Chef Jonas Karlsson, who previously worked at the fifth floor restaurant at Harvey Nichols, will be in charge of kitchen operations, and will be working on a daily-changing seasonal menu.

Dishes to expect include earthy soups, a range of risottos and a varied selection of meat and fish. Duck bresaola with pickled cucumber and pomegranate, Jerusalem artichoke soup with homemade brioche and cured Loch Duart salmon with beetroot and peashoots will also be featured. The restaurant will also offer a comprehensive wine list.

Heaton, Butler and Bayne marks another triumph for the area’s burgeoning restaurant scene. With Balthazar, Polpo and Meat Market all close by.
