If you’re looking for some fine wine and dining that boasts luxury cuisine this autumn, look no further than Will Brown’s Schoolhouse restaurant nestled in the heart of County Down’s countryside beside the beautiful scenery of Strangford Lough and right next to Castle Espie.
The eatery – which was awarded ‘Best Country Restaurant in Ulster 2012’ by Sunday Life – is owned by acclaimed chef, Will Brown who was voted as one of the Top 10 Chefs in Ireland by Bridgestone and who has also worked alongside celebrity chef, Marco Pierre-White.
The award-winning restaurant has recently undergone an entire structural and interior makeover to achieve a modern elegance, combining beautiful picturesque views surrounding the building with the impeccable taste of Will Brown’s fine cuisine.
Patrick Leonard, the main contractor for PL Construction subsidiary to Provence Living, has taken over the structural development of the building. Incorporating his wealth of experience in carpentry, tiling, painting and installing wooden floors, manufacturing bespoke furniture and. completing Hotel and Spa fit-outs to a high standard, Patrick has and will continue to transform The Schoolhouse into a stylish and contemporary Hotel and Restaurant. Working alongside Patrick is the owner of Provence Living, Anne Scott; an experienced Interior Designer who has worked with a range of clients in Dublin, New York and Paris. Anne has teamed up with Will to transform the restaurant into a modern chic hotspot.
Premier Hospitality caught up with Anne to find out more on her inspiration for this setting:
“I was delighted to work on this exciting project with Will; it was rewarding to work together and come up with a vision and then turn that vision into a reality. I believe that the makeover we have created alongside PL Constructions now reflects the upmarket, quality-driven restaurant that Will Brown’s Schoolhouse is. We hope to continue to work with Will to maintain the fresh ambience of the restaurant.”
And that’s not all – Will is working with PL Constructions to install an exciting and unique, Kitchen Garden where he plans to grow his own fresh vegetables and herbs to be served in the restaurant. This will be achieved through the installation of a Polytunnel and will be ready for customers to explore from the end of September. Will also caters for private parties making this an ideal location for a small wedding venue or other special events you won’t ever want to forget.

Anne let us in on a sneak preview of her vision for these twelve luxury suites:
“Enhancing the luxury and quality of all aspects of the rooms is our top priority when choosing the layout and design of the rooms. We want to create a relaxing, elegant space for guests to unwind, relax and enjoy the peace and quiet and the beautiful country views. Providing nothing less than the most comfortable beds to help you get that well deserved rest, covered in the finest 100% cotton bed linens and sheets. We believe in quality. The colour scheme will comprise of relaxed, subtle pastel colours including taupes, greige, fresh whites and dashes of sea foam greens. Neutral colours with a pure linen finish will be used for the curtains and upholstery with a pure linen finish. Burnt oranges will be selected for the cushions and sofas for that cosy autumn feel.
“The ensuite bathrooms will have a real New York vibe – sexy yet understated. We will be installing state of the art power showers set against a panel of decorative mosaic tiles to be complemented with an atmospheric light-mirror. Supplied with thick, cotton towels, luxury hot towel rails, hand-made soaps, organic beauty products and soft, towelling bathrobes, we hope to promote comfort and to encourage that overall feel good factor.”
What’s more impressive is that Provence Living and PL Constructions work together to create one-of-a-kind exclusive handmade furniture unavailable anywhere else. While Anne Scott delivers the artistic vision, Patrick Leonard uses his talents to craft the furniture fitted to the design specification always with a high quality finish. For the renovation of the Schoolhouse Inn, both Anne and Patrick have worked together to design and create unique furniture including a beautiful reclaimed wood hall table for the original entrance hall.
“It’s very refreshing to work with someone like Will Brown who shares our passion and ideas for creating something new unlike a lot of commercial hotels who replicate each other. Will believes in providing guests with creature comforts and wants people to feel that the Schoolhouse is a home from home. Further renovation plans are set to continue to enhance the glass reception area and create a library setting in the sitting room which boasts an impressive large fireplace – perfect for guests to unwind and relax.
