Welcome to the latest edition of Premier Hospitality.

This month we find out more about entrepreneur Martin Williams’ first venture, the impressive three storey M; as well as popping into Michelin starred chef Tom Sellers’ second restaurant The Lickfold Inn; finally we have a nosy at CG Restaurants & Bar’s latest Dirty Martini venues.

First in line this month is Creed Design as we profile the Leicestershire based design practice. Second up is the luxurious multifunctional M, created and opened by Martin Williams in November this year. The venue comprises two restaurants; GRILL and RAW, a destination cocktail bar, a wine tasting room, a secret den and four private dining and events spaces.

We caught up with Martin Williams, the Founder and CEO of M Restaurants, to find out more about the company’s debut venture. Martin commented: “I wanted to create a venue that was multi- faceted so I went site hunting earlier this year and managed to find a site in June 2014.With M, it is the first time I have ever ventured out on my own, so I have used my 20 years experience, which has been exciting.”

The Lickfold Inn has recently reopened The Lickfold Inn following a makeover to the delight of West Sussex residents. Overseen by Michelin star chef, Tom Sellers, the building has been restored to its former glory and has already proved a hit with punters. The Grade II Listed building comprises two floors, with a pub on the ground floor and a restaurant located on the first floor. Whilst the 40-cover restaurant provides a fine dining experience, the pub serves up a selection of pub snacks and drinks.

Lastly we look at London leisure operator CG Restaurants & Bars recently opened venues for its flagship Dirty Martini brand. We explore the sites at Monument and St Paul’s which take the total number of bars in the group to five. CEO Scott Matthews said: “This is an exciting time for our company; the success of our Bishopsgate and West End bars has been significant and we’re certain the new sites will enhance our presence, profile and profits across premium areas of the Capital’s business district.”
