New Moon Company has been established by restaurant stalwarts, Paul Newman and David Mooney, and now comprises six successful venues across the North West since their inception three years ago.

The firms portfolio includes The Lord Binning in Kelsall, Old Sessions House in Knutsford, The Hanging Gate in Weaverham, The Montgomery Pub & Kitchen, Beef & Pudding in Manchester and the most recent addition; the Mockingbird Taproom in Chester.

We caught up with David Mooney, the co-owner of New Moon Company, to find out more about the company and the two latest venues Beef & Pudding and Mockingbird Tap Room. David commented:

“Both myself and Paul have grown up in the hotel and restaurant industry; I’ve worked for Marco Pierre White and Raymond Blanc and Paul was a founder board member of Living Ventures. We have known each other socially for a while and after a few unsavoury experiences decided to join forces and shortly after opened The Lord Binning in Kelsall.

“Linking a venue to an area is essential; my background is in Two Star Michelin restaurants but if you plonked this kind of venue in the middle of Whitehaven it wouldn’t survive. You have to look at the area and look what most of the customers want and will spend money on; so we have had to be clever and figure out what people want. Using this approach is how we have grown the company from zero to £6.5 million in under three years.”

The Mockingbird Tap Room, located within Chester’s city walls, opened in October this year. Located on Watergate Street the venue used to be known as the Fat Cat however following a few months of planning and a full refurbishment the venue has now been transformed, serving an array of Pan-Gulf delicacies.

High profile North West chef and New Moon Company coowner David Mooney is the chef patron of the New Moon Pub Company. Dishes to die for will be on offer including a beautiful range of gumbos and fajitas, a stonking selection of burgers, including the colossal ‘Hoover Dam’ to fresh scallops, crawfish and shrimps. Ribs doused in cola, chilli & treacle will also be a favourite. Cheshire’s finest beef and blindingly fresh fish, all cooked with an abundance of styles & flavours representative of the Gulf regions also feature.

A range of cocktails have been lovingly blended and are up for grabs, as are premium spirits and quality mixers, craft ales and an extensive list of wines and Champagnes by the glass, bottle or bucket.

Coowner Paul knows Chester very well, having lived there for 10 years. He also worked for Chester based Classic Wines & Spirits and opened The Living Room and the Blackhouse Grill in Chester. Paul commented:

“Chester has always been on our list of priorities for a site, we have just been waiting for the right venue to come up . We are delighted we have got this site, it was perfect for our concept.”

The semi-cellar venue is located in a stunning Georgian, double vaulted space that offers something a little different to diners in the city. David said the tag line for the venue is “Dirty food cleaned up!”

The Beef and Pudding, an urban pub based in Manchester city centre, is another of the firms more recent ventures. Paul and David bought the premises as a poorly trading pub on the verge of closing down and have revamped it into a sassy, modern, relaxed drinking establishment.

Located in the business district of the city the venue is a stones throw away from a plethora of office developments making it the ideal stop off point for workers all over the city. The design of Beef & Pudding is clean and tidy featuring an exposed ceiling and simple, laid back furniture.

The venue features bright red neon signage which grabs passers bys attention. The venue is also next to the city’s busiest stretch of metro and was a very competitive site to ascertain because of its location. Due to the venues success Paul and David are now looking for another site to open a second Beef & Pudding.
