Adam’s Restaurant

Adam’s

An exciting new addition to Birmingham has been revealed, under the name of Michelin starred chef Adam Stokes, with a focus on great British food and flavours. The swanky restaurant boasts contemporary interiors with a traditional twist, as well as bespoke furnishings and a glamorous wine room.
With Adam’s previous restaurant, just around the corner from this new one, an incredible two years in Birmingham culminated in them being rated the No1 fine dining restaurant in the UK and No4 in the world, based upon Tripadvisor reviews. Proof if any were needed that Adam’s is a restaurant delivering a fantastic customer experience, not simply chasing plaudits for the sake of it.

Three floors make up the new restaurant, with the main dining space on the ground floor seating 35 diners. A private dining room with 16 covers is in place for guests who wish to undergo a more exclusive experience. The lower ground floor features a large showpiece kitchen with a chefs table dining area for a spectacular theatrical show adjacent to the kitchen. Finally, the basement comprises a staff lounge, staff kitchen and storage facilities.

Despite its image as a high-end restaurant, great value is something Adam’s promotes, with a lunch menu and a tasting menu, as well as the addition of an a la carte option – all delivering excellent value with no compromise to quality. A bespoke tasting menu is available to guests at the chefs table.

Commended design practice Faber was responsible for the interior design aspects of the restaurant project, producing a truly impressive transformation to the former site.

Tony Matters, Design Director at Faber, revealed the latest on the restaurant to Premier Hospitality. Tony commented:
“We’ve been looking at potential sites with Adam and Natasha since the completion of their pop-up two years ago, having found the site we started the design process about a year ago. Building work kicked off in September, with an intended completion date of January 2016; a tight schedule for a project of this size, but we managed it.”
“For us, the starting point of the design was our understanding of Adam’s ethos to cooking; familiar flavour combinations with a contemporary twist. This manifests into a design that balances old with new, the formality of a fine dining restaurant with comfort, warmth and an un-pretentious atmosphere.”

Walking into the restaurant guests are first greeted with a free standing bar in a dark wood finish, a stunning island in the centre of the space. The black and white tiled floor marks a bold statement, displaying the attractive logo of Adam’s cut into the tiles.

Once into the main dining room, large bespoke feature lights are the focal point in a space that oozes quality; carpets with a wood border, rich fabrics, wall panelling and Art Deco inspired windows combine to create an atmosphere of timeless elegance.

To the rear of the main dining area is the private dining room. Sliding glass partitions allow this space to function as part of the restaurant or be entirely separate.

Adam’s

As Tony Matters says:
“The lighting scheme, which incorporates bespoke chandelier type fittings, is central to giving the space ambience. The bespoke lights also add individuality; they’re designed specifically for this space so you won’t see them anywhere else.”
On the lower ground floor is a showpiece kitchen and ‘chefs table’ dining area, which can accommodate up to twelve diners. This is something Tony is particularly pleased with.
“The kitchen is one of the most spectacular I’ve ever seen. The chef’s table sits at the front, with an ambience and homeliness in contrast to the bright efficiency of the kitchen. It creates a real sense of theatre, it’s as if you’re watching your own personal show.”
When asked about the challenges they encountered, Tony mentions the difficulties they had converting a building of this type:
“The building was chosen because of its size and location, aside from that it really didn’t lend itself to being a restaurant. We had huge challenges, particularly with the mechanical systems. Rather than having cooker hoods, the kitchen ceiling acts as one giant extractor. It’s quite clever – the same system is used in Heston Blumenthal’s kitchen at Dinner By Heston.”

The lunch menu offers sumptuous dishes that include lamb shank, tomato, cumin and charred onions; cod, smoked haddock brandade and kale; and rhubarb served with caramel, blood orange and oat crumble. Guests can indulge in three courses from the lunch menu at a modest £35, from 12 noon to 2pm Tuesday to Friday.

Delights on the tasting menu include brassicas, charred liquor and chorizo; halibut, sea vegetables, leeks and oregano; lamb, miso, caramelised onions and fennel; and chocolate, earl grey, ginger and orange. Priced at £85 per person, this menu allows diners to undergo a true journey, tantalising their taste buds with a range of Adam’s cuisine.

The a la carte menu features mouth-watering mains such as chicken, lovage and celeriac; venison, banana shallot and red cabbage, and duck served with turnips and baby leeks. Guests can begin with starters including purple sprouting broccoli, brown shrimps, shallots and béarnaise; and end the course of dinner with desserts such as the irresistible sticky toffee pudding with smoked lemon and vanilla.

Tony summarised with:
“It’s been an absolute privilege working with Adam and Natasha. They have immense passion for this industry and together they’ve assembled a formidable team. It’s been great to see them flourish, from their first small restaurant around the corner to what is now a flagship restaurant that any chef would be proud of. We’re pleased to have played our part in moving their vision up to the next level.”
