Red Dog Saloon Selects First Northern Spot – Authentic Kansas Bar-B-Q Restaurant Takes On Northern Market

Family-run Bar-B-Q restaurant brand Red Dog Saloon have continued their expansion plans with their first venture in the North West.

The company’s sixth American restaurant opened in May on Bold Street, Liverpool, following a £1.2 million investment. Work on the project began in March 2016 and was completed by DesignLSM – a design agency who specialise in creating strong brands and striking environments for the hospitality industry.

Speaking to Premier Hospitality magazine about the project, Jenny Burns, Senior Designer at DesignLSM: said: “Our brief was to expand upon the concept of existing Red Dog sites and create a destination restaurant that would perfectly reflect the brand’s character and its new location within the vibrant city of Liverpool.

“Located within a former bank, the site holds an arresting double height space complete with a lobby, main restaurant and mezzanine private dining area.

“In contrast to previous sites, we designed a new series of private dining rooms, which feature intimate leather booth seating along with a grand communal dining table offering diners views across the main restaurant.”

The design team at DesignLSM incorporated elements inspired by Colorado’s natural landscape into the scheme helping to inject an authentic mid-western experience that appeals to the local audience.

Jenny added: “A prominent feature in the space is the striking stairway, which leads diners up to the private dining area. Inspired by an authentic Southern American Hunters lodge, the walls are adorned with black painted timber, recessed panels and a curious collection of Taxidermy pieces. A vast circular chandler takes center stage in the restaurant taking advantage of the stunning full height space.”

Already renowned in London for its fat ribs, buffalo chicken wings, hickory smoked pulled pork and burgers; the company has launched restaurants in Nottingham and Southampton within the past 18 months.

Owner Tom Brooke said: “It has been an incredibly exciting year for Red Dog Saloon and Liverpool was the perfect choice for our first foray into the North. As an incredible powerhouse for companies, the region offers such an exciting platform to continue growing our brand. After a nationwide search for suitable locations, Liverpool was chosen as it is a fun and energetic city with a thriving independent scene that perfectly reflects Red Dog Saloon’s personality.”

Launched in 2011,Red Dog Saloon prides itself on the quality and provenance of its food, with no binders or fillers in its burgers. The brand only uses the best meat, flavoured with its special rub and cooked low ‘n’ slow for 18 hours in smokers imported from Oklahoma.

The restaurant opened with a brand new menu, which features an extensive selection of cocktails, bottled beers, tequila and bourbon, a bottomless brunch menu and belly busting food challenges.
“We feel we offer something really different to other Bar-B-Q restaurants in the city,” added Chad Crooks, Operations Director. “This is a family-run business and we are passionate about the food we serve and the fun, unpretentious party atmosphere we create for our customers.

“Our chefs use original cooking techniques that have been handed down over years, so we really do provide real deal American Bar-B-Q. We can’t wait to see what Liverpool, and the North, as a whole, thinks of Red Dog Saloon.”
