Following an extensive enhancement program, Four Seasons Hotel Hampshire recently opened the doors to a brand new bar and restaurant. Wild Carrot takes its name from the dainty white wildflower that can be found extensively in the hotel’s estate and was created by acclaimed designer Martin Brudnizki.

Martin has created a space distinctly British in design, incorporating rich colours, textures and fabrics. The dining room at Wild Carrot plays with classic detailing alongside subtle contemporary pieces, adding a touch of eccentric character and charm to the quintessential country house. Offering rolling countryside views framed beautifully by large floor-to-ceiling windows, the spacious dining room exudes a stylish yet unpretentious and relaxed feel.

In addition, Wild Carrot also features a private dining area that can seat up to 25 guests, and an outdoor terrace that reflects the natural lushness of an English garden, draping with green foliage entwined with statement pedant lighting.

Food at Wild Carrot is overseen by Executive Chef Dirk Gieselmann alongside newly appointed Restaurant Chef Adam Fargin. Chef Dirk was appointed in May 2017 and joined with more than 20 years of experience working in some of the finest restaurants in the world. The menu at Wild Carrot is a blend of Chef Dirk’s signature dishes – reflecting his culinary journey and experiences – and Chef Adam’s contemporary take on British classics.

Menus change seasonally, making use of the freshest ingredients sourced locally, from farms and markets further afield. An open kitchen adds a sense of theatre and spectacle to cooking at Wild Carrot, with guests invited to openly interact with the Hampshire chefs.

Alongside the Restaurant, The Bar at Wild Carrot features an exceptional menu of classic cocktails and artisanal concoctions, inspired by seasonal ingredients and the intriguing history of the local area, such as The Garden – inspired by the Hotel’s 17th century Walled Garden – incorporating Silent Pool gin, crème de violette, lemon and lavender grown on the Estate. A selection of fine wines and craft beers are also available.

Adjacent to the Bar, the Lounge features a playful edge in design, with decorative foliage wallpaper, bringing the freshness of the countryside into the room, where guests are able to unwind on comforting deep sofas and chairs.

Four Seasons Hotel Hampshire opened in 2005 and boasts a total of 133 rooms including 22 suites. Housed within an 18th century Georgian manor house with period-style additional wings and a conservatory pool, the hotel also offers access to the extensive 500-acre grounds of Dogmersfield Park with lawns, enclosed gardens, stables and a canal. Each room has English furnishings and classical architectural details.

Guests can unwind at the hotel’s spa, which is housed in a converted 18th-century stable block with modern interiors featuring polished natural materials. Features include an outdoor vitality pool and a central courtyard quiet relaxation area. Those looking for something a bit more active can enjoy a gym, additional swimming pool, canal boating, clay pigeon and skeet shooting, croquet, falconry, tennis and horseback riding.

Wild Carrot was part of a wider enhancement program that has also seen the hotel unveil a charmingly redesigned Library and a striking Drawing Room. In the Library guests can enjoy a traditional afternoon tea while the Drawing Room is a classic country house sitting room.

Most recently, Powells were appointed as the main contractor on Four Seasons Hotel Hampshire, to deliver a £6m refurbishment and extension within a seven month period. Works included the remodelling of the main reception in the Grade 1 Listed Manor House and a steel framed extension to provide greater capacity to the restaurant area. New kitchens were provided along with bars, library and the Royal Suite.
