Heads & Tails, a premium gin tasting venue situated in Signature Pubs’ Rutland Hotel, has taken Edinburgh by storm offering guests an industrial environment to enjoy an array of mouth watering cocktails.

Working with Edinburgh Gin, Signature Pubs has created an impressive sub basement gin tasting experience for guests enabling them to learn about the gin making process in the day; before the venue is transformed at night into an elegant cocktail joint.

Premier Hospitality caught up with Adam Tibbatts, Director at project designers Tibbatts Abel, to find out more about the space. Adam commented:

“We have previously done a lot of work for Signature Pubs in The Rutland Hotel as we do the majority of their design work for them. Edinburgh Gin Company contacted Nick Wood, the Managing Director of Signature Pubs wanting to work together. With this in mind we began thinking of a concept for the basement of the Rutland Hotel; the decision was to create a gin cocktail bar called Heads &Tails.”

WFC Contractors acted as the principal contractors on the project, working alongside Tibbatts Abel to bring the design concept into reality. Work got under way in April and the project reached completion in June.

The basement venue consists of three main areas; a seating area, the main bar area and a thoughtfully decorated lounge space. The on-site team have highlighted the existing granite features in the basement as well as creating unique art pieces. Local artist Lindsey Henderson helped create the artwork capturing a lot of references to gin and Edinburgh in the paintings, which were painted directly onto the venue’s walls.

The whole venue has an industrial theme with a twist due to a plethora of refined touches being located throughout. The design team has utilised a lot of natural materials in the space, including copper which highlights the impressive pot stills storing Edinburgh Gin.

Heads & Tails also features bespokely made light fittings, copper piping and tasting tables which were custom made by Room Food. The venue has room for 50 covers as well as space more guests in the standing areas.

Lead designer, Adam Tibbats added:

“It is great for me personally to be involved with Heads & Tails as we are very proud that Signature Pubs are happy to keep employing us. We have plans to work with the firm again and are currently looking at other developments with them now.”
