Bistrot Pierre have recently unveiled their latest 90 cover venue in Bath, situated in one of the city’s traditional Georgian townhouses, which was originally extended in the early 19th century.

The bistrot has been designed by Devon-based architects Gillespie Yunnie who have worked to keep all the period features intact in the space, whilst surrounding them with traditional décor.

Working alongside Charles Evans Shopfitters and stylist Holly Keeling the team have created a warm, welcoming ambience that successfully showcases both the food and the building.

Diners at Bistrot Pierre can enjoy the range of much-loved French classics featured on the menu including steak-frites, boeuf bourguignon and crème brûlée, as well as lighter bistrot dishes.

Co-founder of Bistrot Pierre Robert Beacham said:

Premier Hospitality caught up with Jackie Gillespie of Gillespie-Yunnie Architects to find out more about the project. Jackie commented:

“We worked with Bistrot Pierrea few years ago, helping them to gain Listed building consent when they opened a branch in Royal William Yard, in Plymouth. Following this we were asked to work on another venue in Torquay which went really well and was shortlisted for a Restaurant & Bar Design Award.

“Leading on from this recognition we have done all of their restaurants for them and really got to know them, as they are a very hands on client. The site in Bath was a very difficult scheme because it was a dark, original Georgian house and was hard to navigate; in spite of this we drafted a sketch scheme for the space and the clients liked it.”

The venue, which officially opened on the 12th June, was a tricky space to navigate especially in the basement which was not large enough to fit the kitchens. In light of this the kitchen was constructed on the ground floor and the long and thin space has been refreshed and revamped into a  light restaurant, with an array of historic features including  impressive lanterns and lean to roof lights.

The project has thrown up a number of challenges for the team due to its Grade II Listed status meaning they have had to work closely with a conservation officer.

Jackie added:

“Bath is one of the hardest places to work in conservation terms as everything we did, or wanted to change, needed permission including all of the alterations. As well as ensuring the structure of the building wasn’t affected we also had to accommodate the facilitating of a new restaurant with all of its uses and services.

“The back of the building was not accessible either so everything had to come through the front of the building which was challenging to navigate. Despite these difficulties, the team were great!

“It has been really nice to work with a client who wanted to take the design concept a bit further, whilst respecting the Listed building, to create a really nice interior. The clients are very hands on and so were involved in the whole process which was very rewarding and were also willing to spend money on the interiors which was great.”

The brand are currently developing new venues in Newport and Birmingham, as well as undertaking refits of older Bistrot Pierres across the country.

Rtfact Ltd was approached by Bistrot Pierre to produce a selection of exterior greenery design ideas as part of the restaurant expansion programme. Rtfact Ltd collaborated with Gillespie-Yunnie Architects, submitted a number of concepts and worked with Bistrot Pierre to create a bespoke design to meet their budget.

The project saw Rtfact Ltd supply Bistrot Pierre with olive trees with lavender in dolly planters, as well as mixed herb boxes and a selection of small lavender pots for the bistro tables.
