Offering delicious Modern Asian cuisine and a sophisticated venue, Adrift by David Myers is a stunning new restaurant located in Singapore, featuring celebrity chef, David Myers.

The site of Adrift is situated on a raised section of the ground floor lobby inside Marina Bay Sands.

Acting as main contractor, Vaford began the refurbishment project September 2014 (design started early 2014), and Adrift was opened officially for business just after Chinese New Year 2015. Previously housing a Lobby Lounge Bar, the area was refurbished into a number of brand new rooms. Impressively, the fabulous restaurant has been shortlisted for the Inside World Festival of Interiors in the Bars and Restaurant category.

In accumulation the total area of the site is circa 4650² ft, with the final layout seeing this space divided into 650² ft of show kitchen and the remaining 4000² ft transitioning through various spaces, with a central cocktail bar providing the energy for the surroundings, lounge dining and semi-private rooms culminating in a uniquely ethereal private function room.

Premier Hospitality caught up with Stephan Brutti, of Wilson Associates, to discuss the restaurant project. Stephan commented:

“Metal and concrete were complemented by a selection of timbers, which added warmth to the space.  The peek-a-boo enclosure that extends into the hotel lobby was a layered combination of metal and timber. There was a concerted effort to re-invent concrete and expanded metal, weaving and fusing them together, to create un-expected organic elegance.”

Apart from architectural lighting (even some of these have bespoke filters, projecting patterns onto the interiors), all fixtures and finishes were bespoke. All were uniquely designed and drawn by Blueplate Studios, the specialty food & beverage design studio at Wilson Associates. Lighting Designer PLD ensured the right ambience was created with fitted lighting.

Stephan said:

“The project’s unique challenge was how to design a space from an architectural perspective that could live in the iconic 50-story atrium at Marina Bay Sands. It needed to be congruent with the existing aesthetic, but also have a unique identity. So, we created an alluring “peek-a-boo” enclosure, which lured guests inside, and once inside, kept them engaged.

“The layered timber and metal construction was a beautiful backdrop for the restaurant’s cocktail bar and lounge area.”

Chef David Myers designed the kitchen, and Wilson Associates designed the show kitchen to be clad in reclaimed barn wood from the USA, allowing the renowned American chef a sense of place for his first restaurant in Singapore.

Stephan commented:

“To design a celebrity chef restaurant in the heart of such an iconic hotel is a massive opportunity for a design studio. It is also unusual for an interior design practice to be able to express their ideas in both large-scale architectural form as well as delicate interior detailing.”

Blueplate Studios, located in the Singapore and New York offices of Wilson Associates, creates holistic food & beverage experiences. It would be easy to say that the company designs restaurants, but their scope is more robust than just interior design.

According to Stephan:

“Most recently, our studio has designed Gordon Ramsay’s Bread Street Kitchen in The Shoppes at Marina Bay Sands, Le Lapin in the I.M. Pei-designed Macao Science Center, Les Menus par Pierre Gagnaire, Tim Ho Wan (Michelin-star dim sum) inside Lotte Hotel Hanoi, Akira Back at JW Marriott New Delhi Aerocity, and Jade Dragon inside City of Dreams, to name a few.”

TD Fabrics has been in operation since 2002 and within this time have supplied fabrics to a vast range of hospitality projects both locally and internationally, including Aman Resorts, Four Seasons, Ritz Carlton, Shangri-La, Louis Vuitton Showroom and Reflections Residence, amongst others. More recently, TD Fabrics has been involved with the prestigious, Adrift by David Myers.

Working on Adrift, TD Fabrics was responsible for the supply of exquisite and luxurious premium leather from M&G leather and Rubelli Fabrics from Italian Tanneries. The materials were used in the majority of the upholsteries within Adrift.
