Saints Bay Hotel builds on culinary excellence
Further enhancing the dining experience at Saints Bay Hotel, Guernsey – a venue already famous for its outstanding cuisine – is a project including the construction of a large new kitchen extension, as well as two brand new restaurants.
The extension includes a demonstration kitchen and one of the new restaurants had been created through the demolition and rebuilding of an existing dining facility, whilst the other restaurant, which is Moroccan themed, has been created within an existing space.
Ashraf Elsergany, head chef and manager at the hotel said: The new extension has been built on to the original kitchen, doubling the space and contains a demonstration kitchen used for providing cookery demonstrations and courses to guests and visitors. In addition to providing entertainment, it is envisaged that the demonstrations will also attract more diners.
In addition to demonstrating recipes such as the famous Guernsey Gache fruit bread, we will also be covering food safety – for example in storage and preparation, as well as for events such as barbeques.”
The new extension will also incorporate a bakery and a chocolatier area for preparing delicious desserts.
The extension is constructed with blockwork external elevations and special hygienic easy-clean plastic finishes on the walls, floors and ceilings internally.
One of the new restaurants, which accommodates 120 covers, has been created through the demolition and complete reconstruction of an existing dining facility.
The extension has been constructed in blockwork with a flat roof and incorporates large areas of glazing overlooking the hotel gardens and swimming pool, and also incorporates a retractable dome roof for alfresco dining in fine weather.
The internal design features moveable seating and a colour palette of gardenia and neutral shades, with artwork themed on local views displayed on the walls.
“This is an award winning restaurant with an established client base which has proved very popular on the island, so we are expecting the new venue to do well,” said Ashraf Elsergany.
Created within a former lounge area in the original hotel building, the new Moroccan restaurant has been designed by Maurice Fletcher.
“The restaurant looks really beautiful and has been finished in Moroccan style throughout, including the furniture, flooring fittings, lighting and decor, with the main colour palette being in red and gold. It also features a tented ceiling arranged around a huge 20ft by 9 ft glazed dome. The menu offers a variety of typical Moroccan dishes,” said Ashraf Elsergany.
“I am very pleased with the outcome of these projects, we are very happy,” he concluded.
