Brasserie Prince by Alain Roux
The Balmoral, a Rocco Forte Hotel in Edinburgh, opened Brasserie Prince by Alain Roux on 11th June 2018. In collaboration with Alain Roux, Chef Patron of The Waterside Inn, Bray-on-Thames, and his father Michel Roux, O.B.E., legendary chef and restauranteur, it is a celebration of a ‘new alliance’; matching the very best of Scottish produce with classic French cooking.
The restaurant serves breakfast, lunch and dinner, along with a seafood and charcuterie from the raw bar. Guests can enjoy a seasonal menu that includes hearty dishes featuring the highest quality produce. An adjoining bar and lounge area, a destination in its own right, offers classic cocktails and a food menu of French snacks and sharing platters.
The restaurant space has undergone a complete redesign led by Martin Brudnizki Design Studio (MBDS). The colourful and vibrant interiors showcase a strong partnership between the internationally acclaimed studio and Olga Polizzi, Rocco Forte Hotels’ Director of Building & Design and Sir Rocco Forte.
The elegance and sophistication of Brasserie Prince is immediately noticeable to guests as soon as they enter on the ground floor. Showcasing high gloss lacquer and timber panelled walls in tones of grass green and natural wood and a striped coffered ceiling, diners are presented with a variety of seating options, including traditional banquettes and leather upholstered dining chairs.
Throughout the dining space materials synonymous with Scotland, such as timber, soft leather and wool have been used. A show kitchen with a subway tile-finished front in tones of marine blue contrasts against the soft blue back wall as well as creates a focal point. Antique mirror and brass detailing ensures light is created within the dining space. The ambience of Brasserie Prince is relaxed yet refined whilst the incorporation of the original architecture of The Balmoral nods to the building’s history and foundations.
A large selection of original artwork by Scottish artists, including those local to Edinburgh, prevails throughout the restaurant and bar lounge. In the lobby entrance to the restaurant, photographic prints from the Roux Family archive canvas the walls, creating a familiar aspect to the restaurant as well as telling the story of the foodie family who will oversee the menus.

“I’ve worked with Martin many times and have always enjoyed it; I think our collaboration works well. Martin is really brilliant, particularly when it comes to bars and restaurants; he is the best in his field. He looks at every project individually and always comes up with something different and innovative. Brasserie Prince is the perfect setting for Alain Roux’s cooking in Edinburgh.”
Work on the project began in late 2017 prior to its completion earlier this year.
In addition to the seasonal menu, diners can choose from the daily ‘Grand-Mère’s Specials’, which encapsulate this unique alliance of cooking. A signature cocktail has also been developed under the guidance of Bar Manager Giovanni Cassino. The drink, a French 75 made from gin, Champagne and lemon juice, is a nod towards the ‘new alliance’.
Since June 2018, Alain Roux has been in position as Signature Chef at Brasserie Prince, which replaced Hadrian’s Brasserie and The Balmoral Bar. Alain currently retains three Michelin stars at The Waterside Inn, the only restaurant in the world outside France to have upheld this accolade for more than thirty years.
