Chrysan: Culinary delights from a Japanese master

Chrysan Hakkasan Restaurants

Located within Broadgate West, close to London’s financial district, Chrysan is the latest restaurant from fine dining experts the Hakkasan Group.

The restaurant is set to open in September 2012 – through a partnership with highly respected Michelin star chef Yoshihiro Murata – and will offer innovative and experiential cuisine, within an exquisite setting.

Working closely with Hakkasan, Chef Murata has created a Japanese inspired concept with his protégé Daisuke Hayashi, where local chefs and Japanese chefs alike will work with locally sourced, seasonal ingredients to create exciting Japanese inspired fare.

Ahead of the launch, Chef Murata spent several weeks scouring The British Isles to locate the very best suppliers in order to create the perfect dining experience for his guests. From an in-depth analysis of the UK supply chain, the expert chef was able to source the best products that the country has to offer, from the best ceramics in Wales to the freshest fish along the West Coast of Scotland.

Chef Murata, commented:

“I visited Scotland and tried the local salmon, both native and farmed lobsters and crab, and I was impressed by the amazing quality. The salmon was even better than in Japan! I also met a producer of Angus beef who insisted that the ageing process has to be 45 days, not 60 days.

“Meeting such passionate producers is wonderful. English pork is very good too. There are so many high quality, superb ingredients in the UK so what is the point of sending food from Japan over to London?”

Chrysan is a 130-cover restaurant comprising a dining room – including a chef’s table and private dining room – and NeNe, a stunning 30-seat cocktail bar. The restaurant takes its name from the flower Chrysanthemum and the bar was named after a Japanese princess.

Chrysan is situated within walking distance from both Liverpool Street Station and Spitalfields Market and is perfectly located to reach a wide cross section of the public. The restaurant follows in the footsteps of a number of high profile eating establishments which have opened in London’s East End over the past three years, including sites for top chefs Gordon Ramsay and Jamie Oliver.

Chrysan will serve the traditional obanzai home cooking style of Kyoto, which is best described as simple yet delicious cuisine. In addition, Chrysan will offer an extensive à la carte menu, along with a tasting menu and set lunch menu which will include a bento box option. NeNe will also offer its own menu, comprising a bespoke cocktail list and a selection of light dishes.

In keeping with the high standards of excellence and innovation established by Hakkasan Group, the service style at Chrysan will be less formal than traditional Japanese dining, but will still maintain the appropriate degree of sophistication associated with such a high profile site.

Goodman Hitchens Plc was the main contractor on the project, whilst world-renowned master craftsman Yoshiaki Nakamura provided the interior design work on the restaurant.

In addition to Chrysan, the Hakkasan Group has restaurants in New York, Abu Dhabi, Miami, Mumbai and Dubai as well as two Hakkasan outlets in London.

Chef Yoshihiro Murata

Chef Murata is an internationally acclaimed master of kaiseki – a style of cooking akin to Western haute cuisine. He is the third generation chef patron of a traditional Ryotei restaurant in Kyoto which holds three Michelin stars.

Early into his career, Chef Murata broke away from tradition to train in France and upon his return to Japan he introduced new techniques and influences which redefined the classic approach to kaiseki cuisine. Developing his skills Chef Murata then opened two new restaurants in Kyoto and Tokyo.

In addition to his accomplishments in changing the face of Japanese cuisine, Chef Murata is the Chairman of The Japanese Culinary Academy, which has inspired such high profile chefs as Ferran Adria and Heston Blumenthal.

Chrysan marks Chef Murata’s first international partnership with a restaurant group.

Previous clients include Victoria’s Secrets, Burberry and Aspinal of London as well as Chrysan.

For Chrysan, Becher Joinery Ltd is providing screens, decorative ceilings, panelling and entrance and washroom doors.

Insitu Fabrications

 

Insitu Fabrications specialise in producing stainless steel fabricated kitchen equipment and server counter units for the catering and food processing industry. In addition to fabricating the units, the company also assembles equipment complete with appliances in-situ at the customer’s premises.  All work is conducted by skilled tradesmen with vast experience in the industry.

On The Chrysan project, Sidney Cubbage Ltd is supplying and installing all of the heating, ventilation, air conditioning, plumbing and drainage systems for use in the restaurant, kitchen and bar areas.
