Owned by the UK’s leading operator of pubs and restaurants Mitchells & Butlers, Browns Bar & Brasserie has been serving simple, classic and freshly prepared dishes since 1983.
Although food is important to Browns, the location of each restaurant is also a key ingredient for the chain’s continued success and this latest site is no different.
Browns Bar & Brasserie Liverpool is a 250 cover restaurant situated within shopping, residential and leisure complex, Liverpool One. The restaurant opened in summer 2013 and is already proving very popular with shoppers and foodies alike.
The designer behind Browns Bar & Brasserie Liverpool is international brand and architectural consultancy Harrison, which has UK offices in London and Birmingham. The company has a long-running working relationship with Browns, having previously worked on sites in Birmingham, Manchester, Nottingham and Newcastle.
Speaking to Premier Hospitality about the latest addition to Browns, Andrew Kirk, Senior Designer for Harrison, said:
“Traditionally, Browns restaurants have always been developed within classical architectural sites in business and tourist areas. More recently, however, we have completed a few sites within a more contemporary shell. Browns Bar & Brasserie Liverpool falls into this category.
“Liverpool One is a great location for this restaurant as it is in a busy shopping area with all-day trade; from morning coffee through to evening drinks and dinner. The restaurant is in a more pedestrian area of Liverpool One and thanks to some good organisation, the work was able to reach completion without any problems.”
“When restaurants are installed within traditional buildings we are able to reuse certain elements of the site, such as the existing flooring or individual architectural structures. The site and its finishes always complement what we are striving to achieve, so integrating the brand into a more modern site means we have to think a little more outside of the box.”
Prior to its transformation into the latest Browns restaurant, the site housed music and entertainment store HMV. When work began on the project, the unit had already been stripped back, so the team were given a blank canvas with which to work.
One of the biggest challenges on the project was the introduction of a mezzanine level, which effectively doubled the internal space of the restaurant.
“It was a very skilful aspect of the project and something which we spent great care in developing. The resulting design makes a great addition to the space.”
Harrison has been a key figure within the recent transformation of the Browns brand and it is an achievement which Andrew is understandably proud of. He said:
“Two years ago we redeveloped the scheme for Browns, making the restaurants a little more contemporary. Over the last 12 months we have been undertaking a few refurbishments for Browns and this is a continuous process of development as we upgrade some of the older sites.
“We have a great relationship with Mitchells & Butlers and the Browns brand and this is something which is very important to us.”
With Browns having served fantastic dishes for 30 years, Liverpool One demonstrates that it is certainly no different, with a very tempting menu. Starters include Roasted Goat’s Cheese and Carpaccio of Seared Tuna, whilst classical dishes include The Browns Steak Pie or the 28 Day Aged West Country Rib Eye Steak.
Desserts are also on offer at Browns Bar & Brasserie Liverpool; from the mouth watering Fresh Fruit & Herb Salad, to the more traditional selection of dairy ice creams. With breakfast, afternoon tea and wine menus too, there is certainly something for everybody to enjoy.
