One Sixty is an American-style smokehouse serving up locally sourced produce in order to present smokehouse classics with an English flavour.
Situated on West End Lane in West Hampstead, the new restaurant opened in March 2014 and with chef Andrei Lesment at the helm, has already received fantastic feedback.
Dishes on offer at One Sixty include smoked ox cheek; one pound lobster roll; smoked pork ribs; and smoked lamb breast. All meat is smoked on site to the optimum temperature of 160˚F, which gives the restaurant its name, and this slow cooking process gives the food its distinct flavour.
For those not quite convinced of the smokehouse approach to cooking, One Sixty has removed the sickly sweet taste of over-used BBQ sauce and instead replaced it with the likes of mustard seeds, dill, caraway and chillis. All dishes are prepared on site and with a regularly changing menu, the restaurant offers something a little different with each and every visit.
The menu is backed by a fantastic selection of drinks, with more than fifty craft beers and a cocktail menu designed to complement the food. As well as a regular mix of draught and bottled beers, One Sixty also has a rotating selection of beers from some of the world’s finest brewers.
Interested to find out a little more, Premier Hospitality recently caught up with Pete Lewis, the designer on One Sixty to find out about the design of this latest venue to hit the capital.
“I was approached by the owner Sean Martin, who I had previously worked with on a branding project for a different venture. Sean was looking to open a smokehouse and so he spoke to me about working on the interior design which could perfectly reflect the type of cuisine on offer at One Sixty. Although One Sixty is based on an American smokehouse it actually has a bit of an English and Scandinavian flair to it.”
“I saw charcoal as the key ingredient to the restaurant, so I looked into creating a burnt wood effect which is based on a Japanese cooking technique, Shou-Sugi-Ban. The burnt oak panels were placed around the interior and exterior, creating a theme which runs throughout the venue and these were supplied by Exterior Decking.
“Once we had hit on this idea for the design we had to hold all our other ideas up to this concept to ensure that they would work. We introduced photographs of some of London’s top butchers, which we placed on the walls and the restaurant’s supplier O’Shea’s Butchers also appears amongst these portraits.”
One Sixty has been so popular the restaurant has already had to install another smoker to keep up with demand, so it is not surprising that there are already plans to take the One Sixty brand to new locations moving forward. However, for now the restaurant continues to prove successful and it is something which all involved are extremely proud to be a part of.
One Sixty is open Tuesday to Thursday, 5pm to 12am, Friday 12pm to 12am, Saturday 12pm to 12:30am and Sunday 12pm to 10:30pm. The restaurant is closed on Mondays.
