Flemings Mayfair Hotel, Suites & Apartments is situated in one of London’s most exclusive neighbourhoods. The boutique hotel is conveniently placed just a few steps away from Green Park and Piccadilly and is renowned for its luxury and splendour.

Keen to keep the hotel at the forefront of the hospitality industry, the hotel has recently implemented a remodelling scheme, designed to update and upgrade facilities. The project has included the complete revamp of the hotel’s bedrooms, as well as key areas, and has seen the restaurant and bar transformed into an exciting new dining experience.

Work began on the remodelling project back in July 2014, when Henrik Muehle was appointed general manager at the hotel. Working alongside designer Tony Filmer, the pair used their years of industry experience to create an elegant contemporary venue with beautiful touches and it is safe to say, the results certainly speak for themselves.

Phase one of the project included a remodelling of the hotel’s 129 bedrooms – all expertly reworked to offer guests comfort and splendour.

The second phase of the project included the complete redesign of the hotel’s popular restaurant and bar, transforming it into the stunning, Ormer Mayfair. This elegant addition includes private dining spaces, including The Half Moon Suite and The Clarges Suite.

Flemings Mayfair Hotel is composed of 13 ex-townhouses, all of which combine to create a beautiful Georgian hotel with Great British Heritage and unique Georgian features. The hotel’s breath-taking interiors create an intriguing mix of contemporary style and Georgian elegance.

Discussing the design brief for Phase One of the project, Tony Filmer of Tully Filmer said:

“It was very important to have a design which was relatively easy to implement across multiple rooms, as we couldn’t create bespoke rooms for all of the 129 bedrooms. Instead, we developed a bespoke range of furniture and fabrics which are exclusive to the hotel. Everything from the curtain fabrics to the light fittings has been designed and developed by myself and I feel as though that gives rooms their own personality.

“We have emulated a 1930s feel with the unique furniture shapes. We didn’t want it to have an art deco feel, rather an elegant and understated yet glamorous look.”

The colour scheme in the bedrooms includes soft, warm greys with a lot of texture. The greys are accented with three colour ways which vary room to room. Some of the rooms have indigo accents, some mustard and others indigo. Tully Filmer developed bespoke fabrics and carpets to work within each of the colour ways.

Tony added:

“Our principal goal was to return the rooms back to their elegant Georgian heritage. For example for all of the skirting boards and the door archeries we tried to restore or replicate a Georgian finish. It’s very rare in London to have a ceiling height of over three metres; some of the rooms have up to four meters and huge windows.”

Following the completion of the bedrooms, Designer Rumana Swinton and main contractors Stone Black begun works on The Drawing Room. The newly designed Drawing Room at Flemings Mayfair Hotel echoes elegance and grace in homage to the hotel’s 18th century origins.

This Georgian history is reflected in the room’s harmonious proportions with reinstated period detail including 3m ceiling height and sash windows as well as an original marble fireplace providing the focal point of the room. The room is complemented by a natural, soft colour palette. Contemporary design is mixed with the classic and showcases bespoke cabinetry by specialist artisans with Maccassar Ebony wood tables edged in antique brass, velvet teal sofas and chairs and coffered ceilings.

The room’s heritage is further complemented by exquisite hand-painted wall panels by famous de Gournay depicting early views of India and ‘The Tree of Life’ by upcoming intuitive painter Eileen Schaer. Bookcases on either side of the fireplace display a fascinating collection of art books from Assouline for guests to enjoy and peruse at leisure.

The renovation works on Phase One of the project ran very smoothly, with the hotel remaining open through the construction process.

Henrik said:

“We couldn’t close the hotel for two years so it remained open for the duration. It’s been slightly easier for us with the hotel being made up of townhouses as it meant we could renovate one townhouse at a time. This way guests of the hotel were unaffected by the works.”

With The Drawing Room complete, the hotel’s attention turned to the restaurant, which has undertaken an extensive makeover. The restaurant now boasts an art deco-inspired interior, which features nods to 1920s glamour and art, complete with leather banquette seating, dark wooden panelling and accents of glass and bronze.

Overseen by celebrated chef, Shaun Rankin, Ormer Mayfair is a sophisticated and exquisite 85-cover restaurant boasting a beautiful design and a fabulous menu to match. According to Ormer Mayfair, “Shaun’s new venture with Flemings Hotel will run alongside his current Jersey restaurant.”

Ormer Mayfair’s menu brings together seasonal produce, a strong collection of wines and the passion for food that only a chef such as Shaun Rankin can bring to the table. The menu is a true celebration of food and takes inspiration and guidance from Chef Rankin’s love for the island of Jersey.

According to Ormer Mayfair, Chef Rankin’s “love for the island and its local food will be reflected in the new Ormer Mayfair menu, by offering seasonal Jersey produce including fresh lobster, crab, oysters, hand dived scallops, Jersey royals and hand-picked shoreline foraged herbs.”

The menu includes a delish mix of dishes, with almost 90% of the menu’s ingredients sourced directly from within Jersey. The food on offer is described as a “new style” and Chef Rankin’s “own take on classical, with a modern twist”.

Starters include heritage beets with goats cheese, Kalamata sorbet and truffle honey; Jersey crab salad with pear, lime, vanilla and peanut dressing; and roast rabbit loin with pancetta, baby gem lettuce, girolles, gnocchi and peas.

Main courses include salt baked seabass with parma ham, tomato fondue, black olive caramel, artichokes and saffron; roast duck with foie gras, grapefruit, white cabbage, cobnuts and duck sauce; and venison loin with quinoa, parsnip, medjool date, chocolate tortellini and ginger. Sharing options include fruits de mer and Côte de boeuf & wild mushrooms.

Vegetarian and vegan menus are also on offer at Ormer Mayfair, along with a tasting menu and a far-too tempting array of desserts. A tea and coffee selection (with petit fours) rounds out the selection at the restaurant.

In order to introduce the new restaurant, the Flemings’ former dining space was closed throughout the refurbishment programme. To ensure there was no disruption for guests, the hotel initiated alternative dining options, by utilising the space within The Drawing Room.

Working closely with the Flemings team during the remodelling programme, cooling specialists, Iglu were asked to create a bespoke display & storage solution for Ormer Mayfair’s extensive wine collection. The solution features four individual, temperature controlled & humidity controlled units, to house champagne, red wine, white wine and rosé.

The units were created to include an antique brass finish, with mirrored interiors and dimmable controlled lighting, which enhances the display as well as the ambiance of the restaurant. The two bar areas were also designed to the same finish, presenting a truly unique offering that adds to the ‘wow factor’ of this beautiful new restaurant.

With work on the restaurant, now more than meeting the expectations of all involved, the arrival of Ormer Mayfair is yet another triumph for the hotel and another triumph for London, as it adds another exciting addition to its portfolio of fine dining establishments.

Ormer Mayfair is open for lunch Tuesday to Saturday from 12pm until 2:30pm and for dinner, Monday to Saturday from 6pm until 10:30pm. Ormer Mayfair is closed for lunch on Monday and is closed all day on Sunday.
