Located in the heart of Liverpool, the Sir Thomas hotel is boutique destination housed within a stunning 19th century building. Alongside 39 charming guestrooms, the Sir Thomas is also home to a brasserie and bar that was recently the subject of a major interior makeover.

The new look, which was designed by Wroot Design, has transformed a space that was previously dark and dated into a flexible area that is bright and inviting. The sharp new interior is matched by a high quality food and drink offering that, where possible, is sourced locally. Since reopening to the public in February the reception for the brasserie and bar has been very positive – a testament to the skill of lead designers Wroot Design.

Premier Hospitality recently spoke to Fiona Wroot, Director at Wroot Design, to find out a bit more about the project:

“The Sir Thomas bar, restaurant and reception hadn’t been refurbished for about 14 years so they needed bringing up to date and given a whole new identity. That is what we were tasked with doing. In terms of a brief the client wanted something fresher, more modern and up to date that was flexible for the many varied events they host at the restaurant and bar.

“It’s a lot lighter and brighter. Essentially, before it was a lot more like a gentleman’s club with dark leather couches and carpets. That’s all gone and it’s now a place that’s light and bright during day but can transition easily into an intimate and cosy space at night. It’s now a very comfortable place to sit in, no matter what time of the day.

“Before there was just one light across the whole area but we’ve zoned it so you can have lighter areas and more intimate areas. The bar is now more of a focus because it’s brighter than the rest of the space.”

While work was carried out on site the rest of the hotel remained open and this proved to be the biggest challenge on the project along with a tight time frame.

The food at the brasserie includes an A La Carte menu that is regularly updated to match seasonal ingredient changes. The menu is supplemented by Afternoon Tea and a Sunday Roast to round off the weekend. The laidback bar includes an extensive wine list and an enviable mix of cocktails.

Fiona added:

“I’ve worked with the client for a long time and I know what they want. The relationship has developed over a number of years now and they’re great to work with.”

The Sir Thomas is one of two hotels owned by the Flanagan Group. Ideally placed just a short walk from Liverpool Lime Street station and the historic Albert Dock, the Sir Thomas has long been a popular destination for tourists and locals alike. While a number of the building’s original features have been maintained, the evolution of the interior has resulted in an elegant, clean and inviting space.
