Les Ormes Brasserie – A tasteful transformation

Following a complete strip-out, re-design and superb new fit out, the stunning new Les Ormes Brasserie has opened at Les Ormes Resort in Jersey.

The tasteful transformation has certainly impressed customers and generated enthusiastic feedback.

Les Ormes is a holiday resort catering for all ages and includes a golf course, swimming pools, tennis courts, children’s’ activities and 68-bed 5 star luxury self-catering accommodation in a selection of purpose built properties ranging from one to five bedrooms.

The new brasserie was designed by Paul Sawford, with Apple Interiors as main contractors for the scheme, who were praised for their high standard of work and timely completion of the project.

David Schofield, sales and marketing director at Les Ormes resort said: “The original restaurant was our weak point as it was very old – so we completely stripped out the interior and implemented a comprehensive re-design from scratch to provide a modern, family-orientated venue.”

The interior includes a brand new catering kitchen; a new bar area, a function room to accommodate 50 and a new 130 cover restaurant with external decking area overlooking the resort’s golf course.

Flooring is in a combination of hardwood and carpeting, with bespoke fixed and moveable furniture, including seating bays and corner tables.

These are complemented by a contemporary style oak bar, modern downlighting and stylish wallpaper. The overall colour palette features earth colours, including browns and golds.

A new decking area was created, extending from the interior of the restaurant to outdoors and includes tables and chairs, some landscaping and planting.

David Schofield commented: “The project has really transformed the venue and we have had some very good feedback from customers – our guests are very happy. The main contractors did a good job and finished the three month project on schedule.

“The main challenge of the project was the 12 week timescale as we had to be open for easter. We chose Apple Interiors as they specialise in restaurants and had the right experience for the job.

“This was a vital project for us within the development of the resort. We needed a professional food and beverage operation here – and that is what the project has given us.”

The restaurant is led by head chef Trevor Howard, who worked at Jamie Oliver’s Fifteen Restaurant for 11 years. Trevor brings with him a wealth of talent and passion – and the intention is to make Les Ormes Brasserie a place where guests experience good-quality food combined with fun and relaxed family times.

The menu includes mains such as 10oz chargrilled 28 day hung Irish sirloin steak with wild rocket, parmesan, balsamic salad, fries & pink pepper sauce; Les Ormes 8oz beef burger with baby gem lettuce, beef tomato, red slaw, sun blush ketchup & fries; Fillet of salmon served with roast seasonal vegetables & basil pesto; Pork belly & clams; Vegetable stew with peas, asparagus, artichoke, courgettes, potatoes & tomato with a red pepper salsa; Fish & chips – beer battered cod fillet with smashed peas, tartar sauce & fries; Thai green curry cooked with coconut, carrot, bean sprouts, mangetout, chilli, coriander, spring onion, rice & naan bread; House made smoked BBQ ribs; numerous Italian dishes and a range of house salads.

Les Ormes is owned by the Bosdet Foundation, with all profits going to local good causes. Since 1989, the foundation has quietly donated to the community. In 2008, when the self-catering accommodation was introduced at Les Ormes, the annual amount donated significantly improved. In 2017, over £300,000 has funded 21 local charities.
