50 Kalò Di Ciro Salvo opens in London

Ciro Salvo has officially opened an outpost for his world famous high-end Neapolitan Pizzeria in Northumberland Avenue, a few yards away from Trafalgar square. In an imposing location and carefully designed by an award winning Italian firm, 50 Kalò aims to be the most exciting thing to happen to the London pizza scene in the last 10 years.

After having seen many pizzerias spring up in the UK, trying to copy or simply being inspired by some of the best and original sites in Naples, Ciro Salvo is probably the first, recognised Neapolitan Master Pizzamaker to open directly in London.

Mr Salvo is bringing to London his idea of Pizza made from high hydration dough following his continuous research for the best Campanian produce and raw materials, where possible sourcing from the best suppliers available locally. His research on dough making differentiates him from the masses: he works with a percentage of water that gets to the limits of what others can handle which results in high hydrated dough, light and digestible, which is unique in the Italian pizza scene.

The menu includes many of the pizzas closely associated to Ciro Salvo including Margherita 50 Kalò, Montanara and his world famous, delicate and unique ‘Fritti.’

Particular attention has been paid to the creation of the wine list, selecting the best Campanian Wine’s available in the UK and importing some new ones to ensure that the most appropriate wines are available to be matched to Salvo’s pizzas. This includes a careful selection of Champagnes, with yeasty and complex aromas that match wonderfully with many of the pizzas on the menu.

On site, the kitchen has been carefully redesigned with the imposing wood burning pizza oven sourced by Forno Napoletano, the artisanal family business run by Marco Parente. In addition to supplying the oven at 50 Kalò and ovens at sites in Naples, Forno Napoletano has a proven track record in the UK spanning over 10 years.

“London is amongst all of the European Capitals that can give the best opportunities and represents, for me, a great challenge. The idea of opening a Pizzeria in the UK is the only one that I have seriously considered in the last few years and I believe that now is finally the right time to do so,” said Mr Salvo.
