The Liverpool Gin Distillery

A new £1 million development has opened on Castle Street, Liverpool complete with two bars, a Gin Lab and a Bartender School.

Owned by Halewood Wines & Spirits, Liverpool Gin Distillery gives gin fans the chance to learn how to make the spirit themselves, with visitors also able to choose their own botanicals and distil their own bespoke gin to take home.

Guests will also be able to see Liverpool Gin being made first-hand, in a 600-litre working copper still which is on display on the ground floor. A premium gin and spirits bar is also on the ground floor, with a further premium dark spirits bar at basement level.

Work on the project was undertaken by Medlock Construction and DV8 Designs.

Speaking to Premier Hospitality Magazine about the project, Lee Birchall, Director of DV8 Designs said: “The site was a former music shop which we have turned into a three storey gin distillery. In terms of design, there is a very big copper gin tank in the front window and that was our starting point.

“Structure was one of the biggest challenges because a lot of walls came out in the basement. Going into the basement there were lots of little rooms so we had quite a lot of challenges in knocking walls down and changing the structure. Getting the steel work in was also a challenge because the site wasn’t as open we would have liked and it was quite tight.”

Liverpool is home to some of the country’s best mixologists and now they’ll have their own training school, with the Liverpool Gin Bartender School, housed on the second floor of the distillery building. Budding bartenders can learn a multitude of bartender aspects, such as how to make the perfect G&T, flavour pairings and correct pour temperatures. All graduating bartenders will be awarded a certificate.

Lee added: “Liverpool is quite a tourist destination so this adds another string to Liverpool’s bow and it is something a bit different for people visiting.  We have already had a lot of attention and that just keeps on building and building so I think come December, it will be everywhere.

“For me personally, I went to university in Liverpool, so the town is close to my heart and I really enjoy working in Liverpool. Overall to do four projects on the same street in 18 months vindicates that we are good at what we do so we are really pleased.”

Most recently, CFUK Ltd has been involved with the work on Liverpool Gin Distillery supplying the venue with loose furniture including armchairs, sofas, tables, chairs, benches and more.
