- Chef Chatfield launches new ‘Local to Lyme’ menu
The Alexandra Hotel & Restaurant, Lyme Regis, is welcoming new Head Chef, Chris Chatfield.
A brilliantly creative and passionate chef, Chef Chatfield started his career at The Langdon Court Hotel (2 AA Rosettes) in his hometown of Plymouth. Chris then relocated to the Celtic Manor Resort in Wales (3 Rosettes) before moving to Devon. He was then appointed the role of Senior Sous Chef at Islington Country House Hotel (2 Rosettes) and The Horn of Plenty (3 Rosettes).
At the Alexandra, Chef Chatfield takes the helm at both Ammonite and the Alexandra Restaurant, inspiring a hard-working team to create the very finest food possible. In his first menus for the Alexandra, Chef Chatfield seeks to make the most of the wealth of local Dorset produce, as well as bringing a fresh spin to the dishes.
In the award winning Alexandra Restaurant, which is open for dinner, guests can expect delights from the new ‘Local to Lyme’ menu, which celebrates the best of local and seasonal produce. Dishes include starters such as
Chesil Smokery Hot Smoked Mackerel Scotch Egg served with beetroot and apple gel. Locally Shot Pigeon Kiev with an orange granola, puy lentils, smoked honey and mustard gel.
Main Courses include Locally Landed Hake with chestnut puree, Trill Farm fennel, polenta and a local shellfish sauce, King Oyster Mushroom with Chideock champignons mushroom ragout, pickled mushroom and garlic and thyme potatoes, Slow Cooked West Country Pork Belly potato terrine, salt baked swede, burnt apple, Trill Farm kale, cider sauce and delicious desserts such as Warm Dorset Apple Cake served with an apple sorbet.
Ammonite is open daily for lunch and dinner and is situated in the new Orangery, which was completed in 2018. Ammonite is full of light with doors opening out onto the garden and retains a relaxed, bistro-feel. Highlights on the menu include Crab Linguine, River Exe Moules et Frites, or sharing platters including a Seafood Platter of Lyme Bay lobster thermidor, baked Brixham crag, scallops, oysters, mussels, fries and home-baked bread.
For lunch guests can also enjoy a selection of light bites, which are made using local produce where possible, including Smoked Salmon Blinis, Charcuterie, Salt and Pepper Squid and Warm Chicken Caesar Salad, with a Selection of West Country Cheese to finish.
Chef Chris Chatfield also oversees the Alexandra Hotel & Restaurant afternoon tea on the terrace or if preferred in one of the restaurants.
