Founded by Sussex greengrocer Bill Collison, Bill’s has always stayed true to its roots. Trafford Centre
Bill’s Restaurant and Bar, at intu Trafford Centre, has reopened after undergoing a stylish refurbishment.

Speaking to PREMIER HOSPITALITY MAGAZINE, Bill Collison said: “We have been at our Trafford location for a little while now and we have been coming up with a refurbishment programme for the last 18 months. We wanted to give the restaurant a lift and make people coming in feel a bit more glamorous. To me, it always felt a bit day time and we have now made it a bit more luxurious.”

Famed for its friendly, welcoming atmosphere and seasonal offering, Bill’s has transformed its Trafford Centre restaurant and bar with a striking new interior. Enhancing the Bill’s experience, the redesign includes modern décor, vibrant colours, luxurious velvet seating and stunning chandeliers.

“With this renovation we have added another layer to the business,” said Bill. “It has been a really exciting time for Bill’s, all of the team have loved being part of it and the guests seem to really love it as well. It has been about adding that extra something to the site, to give the guests an extra special experience.”

This glamourous new restyle positions Bill’s as a go-to destination in the evening, from cosy booths to sociable sharing tables, there’s something for everyone at that new-look site whatever the time of day. The new space accommodates up to 92 covers, including terrace dining.

Open all day, seven days a week, Bill’s relaxed, homely, vibe welcomes guests to take a seat at the bar to sip on new and signature cocktails and dine on indulgent British classics and trusted, fresh plant-based alternatives. The food is at the roots of every Bill’s restaurant, with menus nurtured for the seasons.

As this new reveal launches, delicious seasonal menu additions at Bill’s Trafford Centre include Bill’s Beer Battered Cod, with pea purée, tartare sauce and fries and warm Strawberry Dusted Doughnuts, dusted with strawberry sugar and served with fresh strawberries and warm white chocolate sauce. The new set dinner menu is £17.50 for 2 courses and £20.50 for 3 courses, Sunday-Thursday from 5pm.

The new Bill’s Restaurant & Bar Trafford Centre is open from 9am-10pm Sunday to Thursday and 9am-11pm Friday to Saturday.

Spinningfields
Bill’s Restaurant & Bar has set its sights on a stylish new space in Spinningfields, Manchester, opening its doors on Monday 28th October with a vibrant new look.

Famed for its friendly, welcoming atmosphere and seasonal offering, Bill’s has moved from its original Manchester City Centre location on John Dalton Street to its new Spinningfields home, 3 Hardman Square. The new 177sqm dining space accommodates up to 113 covers, featuring cosy booths, sociable sharing tables and a bespoke bar area. There is also external seating, in the heart of Spinningfields, for 30 covers.  Work on the site was undertaken by Toggle Construction who acted as the projects main contractor.

Bill said: “The site has great frontage, amazing outdoor areas and the whole space has an air of grandeur about it when you get inside. It feels relaxed and when I went into the site for the first time, I felt at home straight away and it felt good to be there.

“Each site has its own personality, but there are things that cross over from other sites. You can tell where you are when you walk into a Bill’s restaurant but each one has something different going on.”

Set across one floor in the city’s financial district, the new glamourous restaurant and bar is set to become one of Spinningfield’s hottest go-to destinations. Bill’s Manchester will come to life in the evenings with vibrant cocktails and delicious dinner specials each night, from British classics and fresh-plant based alternatives.

The new Bill’s Manchester is open Monday to Thursday from 7am to 11pm, Friday from 7am to 1pm, Saturday from 8am to 1am and Sunday from 9am to 10:30pm.
